Grilled Pineapple Dessert

Prep Time: 10 minutes      Cook Time: 4 minutes     Total Time: 14 minutes      Yield: Serves 6 to 8

Ingredients:

1 pineapple, peeled, cored and cut into 1 inch slices
1/2 cup brown sugar
2 tablespoons melted butter
2 tablespoons lemon juice
1 teaspoon cinnamon
1/2 gallon vanilla ice cream
Preparation:

Combine brown sugar, butter, lemon juice and cinnamon and mix until even. Brush mixture over pineapple slices. Place pineapple slice on preheated grill over a high heat and grill for about 1 minute per side or until browned. Remove from grill and immediately top with a scoop of ice cream and serve. These are best if the pineapple is warm when you eat it.

Ingredients

  • 4 ripe bananas
  • 1 cup mini marshmallows
  • 1 cup semisweet chocolate chips
  • 1 tin foil boat

Instructions

  1. Preheat your grill to medium high heat.
  2. Slice one banana so there is a deep slit in the top of the banana. Be careful not to cut all the way through the banana.
  3. Using your thumb, or a spoon, separate the fruit of the banana and then stuff it with chocolate chips and marshmallows.
  4. Construct a tin foil boat that is just big enough to hold the banana upright.
  5. Place the banana into the tin foil boat and place it onto the grill. Cover your grill and let the banana grill for 4-5 minutes until the skin of the banana is dark and the chocolate is melted and the marshmallows are puffed.
  6. Remove the banana in the tin foil boat from the grill with a pair of tongs. Let the banana rest for 1-2 minutes and then serve.
