Boerewors roll with chilli and chorizo

A Spicy twist to a classical boerewors roll – packed with flavour baby!

INGREDIENTS:

  • 12 slices chorizo diced
  • 1 ripe avocado de-stoned and diced
  • 1 Tbs olive oil
  • 2 Tbs lemon juice
  • 1 Tbs fresh coriander
  • 1 fresh chilli de-seeded and roughly chopped (optional)
  • Salt and freshly ground black pepper to taste

For the beef boerewors rolls:

  • 800 g beef boerewors (sausage)
  • 1 Tbs olive oil
  • 4 Bread rolls of your choice
  • Handful fresh basil leaves left whole
  • Salt and freshly ground black pepper to taste

METHOD:

  • In a medium-sized pan, fry the chorizo for 3-4 minutes until lightly golden. Remove and mix together gently with the avocado and remaining salsa ingredients.
  • While the chorizo cooks, cook your boerewors on the BBQ or alongside the relish, for about 10-15 minutes, depending on the thickness, turning half way. Remove form the heat and set aside to rest on a warmed serving plate.
  • Assemble your rolls with the basil, salsa and boerewors.
